My name is Anthony Paone, and I am the chef of the Bull Valley Roadhouse. This space is intended as an outlet and forum to explain the ethos behind the choices we make when purchasing food for the restaurant. I accepted the position as chef here for a variety of reasons, but chief among them was the reputation of the restaurant and its practice of responsible and considered purchasing. This can be a confusing terrain to navigate from a consumer standpoint, even as a professional. And, as we have seen from time to time, transparency and honesty aren’t always either. So, I will update this page regularly and I will be honest and transparent, hopefully informative and not pedantic, and welcoming to feedback/discourse from you. Cheers!
